  • 1 pack Violife Epic Cheddar Flavour block, grated
  • 6 medium potatoes, diced
  • 3 tbsp extra virgin olive oil
  • 2 tbsp vegan mayonnaise
  • 3 tbsp coconut milk
  • 1 tsp siracha
  • 1 tsp smoked paprika
  • ¼ tsp salt
  • 1/8 tsp garlic powder
  • 2 tbsp water
  • Parsley, chopped to serve
  1. Preheat the oven to 180°C. Line a large baking sheet.
  2. Place the diced potatoes in a bowl, drizzle with olive oil and ½ tsp of salt and toss until coated. Arrange in one single layer on the lined baking sheet.
  3. Bake for 30 minutes or until golden brown.
  4. In the meantime, prepare the sauce. In a saucepan combine mayonnaise, grated Violife Epic Cheddar Flavour, siracha, paprika, salt and garlic powder. Mix well, then add water and whisk until smooth and creamy.
  5. Spoon sauce over the warm potatoes before serving.
  6. Serve with chopped parsley.
