Patatas Bravas

- 1 pack Violife Epic Cheddar Flavour block, grated
- 6 medium potatoes, diced
- 3 tbsp extra virgin olive oil
- 2 tbsp vegan mayonnaise
- 3 tbsp coconut milk
- 1 tsp siracha
- 1 tsp smoked paprika
- ¼ tsp salt
- 1/8 tsp garlic powder
- 2 tbsp water
- Parsley, chopped to serve
- Preheat the oven to 180°C. Line a large baking sheet.
- Place the diced potatoes in a bowl, drizzle with olive oil and ½ tsp of salt and toss until coated. Arrange in one single layer on the lined baking sheet.
- Bake for 30 minutes or until golden brown.
- In the meantime, prepare the sauce. In a saucepan combine mayonnaise, grated Violife Epic Cheddar Flavour, siracha, paprika, salt and garlic powder. Mix well, then add water and whisk until smooth and creamy.
- Spoon sauce over the warm potatoes before serving.
- Serve with chopped parsley.
