  • 180 g Violife Tex-Mex flavour grated, half for the filling and half for topping
  • 100 g Violife Original flavour slices, in cubes
  • 50 g Violife Creamy Original
  • 70 g Violife VIOBLOCK, melted
  • 5 medium potatoes, washed
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • salt and fresh pepper
  • Chives for garnishing
  1. Wrap the potatoes in individual aluminium foil pockets and secure carefully.
  2. Place in a baking tray and bake in a preheated oven at 180°C for 60 minutes.
  3. Carefully remove the foil and allow to cool slightly. Slice the tops off lengthwise and scoop out the potato flesh with a spoon, leaving the edges intact.
  4. Place the potato into a bowl. Add melted VIOBLOCK, onion powder, paprika, salt, fresh pepper and Violife Creamy Original and mash. Add Violife Tex-Mex flavour grated and Violife Original flavour slices and mix well.
  5. Add the filling in the potato shells and sprinkle some extra Violife Tex-Mex flavour grated.
  6. Place back in the oven on a baking tray and bake at 200°C for 15-20 minutes until nicely melted. Garnish with chives and serve immediately, while piping hot. Enjoy!
