Epic Stuffed Mushrooms

These stuffed mushrooms with melted Violife Epic Cheddar Flavour are the best. Give them a try! A very easy recipe, ready in 40 minutes.

  • 1 pack Violife Epic Cheddar Flavour block, grated
  • 10 portobello mushrooms
  • 1 red bell pepper
  • 1/4 cup broccoli, finely chopped
  • ½ medium onion
  • 3 green onions
  • 1 tsp oregano
  • 6 tbsp breadcrumbs
  • 1/4 cup fresh parsley
  • 2 tbsp olive oil
  • ½ tsp salt, to taste
  • 1/4 tsp pepper, to taste
  • Chives, to serve
  1. Preheat oven to 200˚C.
  2. Clean the mushrooms and remove the stems.
  3. Place mushrooms stem side down on a baking sheet and bake until dry, roughly 15 minutes.
  4. Chop half of the mushroom stems and place in a bowl alongside the onion, green onion, red pepper, and parsley.
  5. In a frying pan add the mushroom mixture and lightly sauté with olive oil. Add the oregano and season.
  6. Transfer the mixture to a bowl and let cool. Add the parsley, breadcrumbs, broccoli, and 2/3 of the grated Violife Epic Cheddar flavour and mix well.
  7. Place the mushrooms stem side up on the baking sheet and fill with the mixture. Top with the remaining Violife Epic Cheddar flavour and bake for 15 minutes.
  8. Garnish with chives and serve.
