Red Velvet Biscuits

- 400 g Violife creamy original
- 100 g powdered sugar
- 3 cups flour
- ¼ cup cocoa powder
- 1 tsp baking powder
- ¼ tbsp baking soda
- ½ tsp salt
- ¾ cup coconut butter (melted)
- 1 ¼ cup sugar
- ¾ cup apple sauce (melted red apple)
- 1 tbsp vanilla extract
- 1 tbsp apple vinegar
- 1 tsp red food colouring
- In a large bowl mix thoroughly flour, cocoa, baking powder, baking soda, salt.
- Directions In a large bowl mix thoroughly flour, cocoa, baking powder, baking soda, salt. In a food processor cream together butter and sugar in high speed, until it becomes light and fluffy. Reduce speed and add apple sauce gradually. Add in the mix red colouring, vanilla extract and vinegar. Continue by adding the flour gradually.
- When it becomes a uniform light red cream, set aside and let it rest for 2 hours until it becomes a thick cream.
- Turn dough out onto a lightly floured surface and toss with flour until no longer sticky. Roll dough out into a 1 cm thick sheet and cut with a heart shaped cookie cutter. Place them on a baking paper on a tray and bake in a preheated oven at 180°C for 10-12 minutes.
- Remove the tray from the oven and allow it to cool down.
- In a separate bowl mix the Violife creamy original with the powdered sugar. Divide the Violife mix evenly between the biscuits and sandwich together.
