Mini Hummus Sandwiches
Mini hummus sandwiches recipe! A great snack for lunchboxes and picnics made with Violife Creamy Original. Full of veggies and amazingly tasty!

FOR THE HUMMUS:
- 1 pack Violife Creamy Original
- 1 can cooked chickpeas
- 60 ml fresh lemon juice
- 60 ml tahini
- 30 ml extra-virgin olive oil, plus more for serving
- ½ tsp ground cumin
- Salt, to taste
FOR THE SANDWICH:
- 4 slices whole-grain bread
- 3 tbsp hummus
- 1 avocado, mashed
- ½ cup mixed salad greens
- 1 medium red bell pepper, sliced
- 1 cucumber, sliced
- 1 carrot, shredded
- To make the hummus combine all ingredients in a blender and blend until smooth.
- To assemble the sandwich, spread hummus on one slice of bread and avocado on the other slice. Fill the sandwich with salad greens, bell pepper, cucumber, and carrot. Slice in half and serve.
