Mexican Veggie Roll Ups

- 1 pack Violife Cheddar Flavour Block, sliced
- 4 large gluten free tortillas
- 350 ml hummus
- 1 can black beans, drained and rinsed
- 1 red pepper, finely chopped
- 3 jalapeño peppers, chopped
- small can of corn, drained and rinsed
- 1/2 red onion, finely chopped
- a handful of fresh coriander, chopped
- Add in a bowl black beans, red and jalapeño peppers, corn, onion and coriander and mix thoroughly.
- Cut the Violife Cheddar Flavour Block in thin slices approx. 1.5cm.
- Spread the hummus on the tortillas.
- Place the filling on top of the hummus and then place the Violife slices in a row.
- Roll the tortillas up tightly from the bottom and gently slice them into bite-sized pieces.
