This spicy vegan Burrito is everything you ever wanted! Simple recipe, ready in just 20 minutes. Definitely worth trying at home!

  • 200 g Violife Tex-Mex flavour grated
  • 1 tbsp oil
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1 tsp oregano
  • 3/4 tsp ground cumin
  • 1/2 tsp onion powder
  • 1/3 tsp smoked paprika
  • sea salt and pepper to taste
  • 2 cloves of garlic, minced
  • 2 tomatoes, chopped
  • 4 flour tortillas
  • 1 can chickpeas drained and rinsed
  • 1 avocado sliced
  • 2-3 tbsp red cabbage, shredded
  • 200 g fresh coriander
  1. In a skillet heat olive oil, add onion and sauté until golden. Add the pepper and cook on medium heat for 5 minutes. Then add the spices, garlic, tomatoes and cook for a further 1-2 minutes.
  2. Toast the tortillas and fill with the veggie mixture, chickpeas, avocado, cabbage and Violife Tex-Mex Flavour grated.
  3. Roll the burrito up and fold in both sides.
  4. In a pan, toast lightly on both sides, garnish with coriander leaves and serve.
