FOR THE CRUST:
  • 300 g vegan cookies smashed
  • 100 g sugar
  • 150 g plant-based butter melted
FOR THE FILLING:
  • 800 g Violife creamy original
  • 330 g coconut cream
  • 200 g sugar
  • 25 g cornstarch
  • 2 teaspoons pure vanilla extract
  • 2 tablespoons lemon juice
FOR THE FRESH STRAWBERRY SAUCE:
  • 250 g fresh strawberries sliced
  • 50 g sugar
  • zest from 1 lemon
TO SERVE:
  • fresh blueberries
  • fresh strawberries
  1. Mash the banana in a mixing bowl. Stir in the sugar, salt and oil. Add the flour and baking powder and mix thoroughly.
  2. Make a well in the centre and gradually whisk in the milk and the creamy until you have a smooth batter. Fold in the blueberries.
  3. Place the batter in the fridge while you make the creamy vanilla sauce.
  4. To make the sauce, mix all the ingredients using a whisk in a small bowl.
  5. Heat a little oil or butter in a frying pan over a medium heat. Add 2 tbsp of the batter and fry on each side for 2-3 mins until golden. Repeat with the remaining batter.
  6. Serve the pancakes with berries, the vanilla cream and marmalade.
