For the pancakes:
- 1/2 pack Violife creamy
- 1 large ripe banana
- 2 tbsp golden caster sugar
- ¼ tsp fine salt
- 2 tbsp vegetable oil, plus extra for cooking
- 120 g self-raising flour
- ½ tsp baking powder
- 150 ml oat milk
- 100 g blueberries
For the creamy vanilla sauce:
- 1/2 pack Violife creamy
- 1 vanilla pod
- Zest of 1 lemon
- 2 tbsp maple syrup
To serve:
- strawberry marmalade
- A handful of blueberries
- A handful of fresh raspberries
- Mash the banana in a mixing bowl. Stir in the sugar, salt and oil. Add the flour and baking powder and mix thoroughly.
- Make a well in the centre and gradually whisk in the milk and the creamy until you have a smooth batter. Fold in the blueberries.
- Place the batter in the fridge while you make the creamy vanilla sauce.
- To make the sauce, mix all the ingredients using a whisk in a small bowl.
- Heat a little oil or butter in a frying pan over a medium heat. Add 2 tbsp of the batter and fry on each side for 2-3 mins until golden. Repeat with the remaining batter.
- Serve the pancakes with berries, the vanilla cream and marmalade.
