Tortilla de Patatas

- 8 oz Violife Just Like Mozzarella shreds
- 6 tbsp olive oil
- 28 oz potatoes cut into ½ cm slices
- 1 red onion sliced
- 5 oz chickpea flour
- 8.8 oz water
- 1 cup oat milk
- salt to taste
- black pepper to taste
- basil leaves to garnish
- Peel the potatoes and cut them in half lengthwise. Slice into ½ cm slices.
- In a skillet, heat the olive oil on high heat, add potatoes, onion and salt and fry for 10-15 minutes, until potatoes are soft and golden. Set aside to cool.
- In a large bowl add the flour, water, milk, salt and pepper and whisk until combined. Add in the Violife Shreds and stir.
- Place the skillet back on medium heat with a dash of olive oil and pour over the chickpea mixture. Cook for about five minutes, until the mixture is no longer runny.
- Place a plate over the tortilla and turn it over, cooking for a further 3 minutes.
- Garnish with basil leaves and serve. You might want to add some freshly ground pepper to taste.
