Vegan Creamy Broccoli Soup

- 1/2 package Violife just like Cream Cheese original
- 2 cups broccoli florets (about 1 head of broccoli)
- 3 medium potatoes, cut in quarters
- 1 tbsp olive oil
- 1 small onion, diced
- 3 cups vegetable broth
- ¼ tsp thyme
- salt and red pepper to taste
- In a large spot, heat the olive oil over medium heat and cook onions until tender.
- Add vegetable broth and potatoes. Cover and bring to a rolling boil.
- Reduce to a medium heat and simmer for 15 minutes or until potatoes are tender.
- Add broccoli and thyme to pot. Simmer for 5 minutes, until broccoli is tender.
- Puree the mixture.
- Season with salt and red pepper to taste.
- Serve with a dollop of Violife just like Cream Cheese Original.
