Broccoli “Caesar” Salad

FOR THE DRESSING:
- 2.65 oz Violife Just like Parmesan, finely grated
- 2 tbsp Violife Just Like Cream Cheese Original
- 1 garlic clove thinly sliced
- 1/4 cup fresh lemon juice
- 2 tsp Dijon mustard
- salt and pepper
- 1/2 cup extra-virgin olive oil
FOR THE SALAD:
- 2.65 oz Violife Just like Parmesan flakes
- 1 broccoli, in florets
- 1/2 of savoy cabbage
- A bunch of kale
- Zest of 1 lemon
- freshly cracked black pepper
- 1 sweet potato, peeled and cubed
- 3 tbsp olive oil
- 1 tbsp paprika
- 2 tbsp salt
- Preaheat oven to 356°F.
- To make the croutons, place the sweet potato on a lined baking tray, drizzle with oil, season with paprika and salt and bake for 15-20 minutes.
- For the dressing combine all ingredients in a bowl and whisk until creamy.
- In a large bowl combine broccoli, cabbage, kale, lemon zest, fresh black pepper and top with the dressing. Toss to combine.
- Serve the salad in shallow bowls and top with the sweet potato croutons and Violife Just like Parmesan flakes.
