  • 1 pack Violife Epic Cheddar Flavour Block, cubed
  • 500 g whole wheat pasta
  • 1 broccoli, in florets
  • ½ shredded red cabbage
  • 1 yellow bell pepper, cubed
  • 1 orange bell pepper, cubed
  • 1 red bell pepper, cubed
  • 1 avocado, sliced
FOR THE DRESSING:
  • ¼ cup red wine vinegar
  • ½ cup fresh lemon juice
  • 1 tbsp maple syrup
  • 3 garlic cloves, minced
  • 1 tbsp Dijon mustard
  • 2 tsp Italian seasoning
  • ⅓ cup extra-virgin olive oil
  • salt and freshly ground black pepper, to taste
  1. Boil pasta according to instructions.
  2. In a bowl add the broccoli, cabbage, bell peppers, avocado, and Violife Epic Cheddar flavour cubes.
  3. In a small bowl whisk all dressing ingredients until well combined.
  4. Pour dressing over and toss to coat evenly.
