Cheezy Ramen Noodles
Who doesn't love cheezy ramen noodles?! Get your ingredients and make this easy, delicious and 100% vegan recipe!

- 20 spears of asparagus
- 3 peaches, cut in pieces
- 1 cucumber, cut in ribbons
- 100 g mixed salad leaves
- a handful of endive leaves
- chia seeds
- 1 tbsp olive oil
- 1 tbsp pine nut
- Zest of one lemon
- Salt and fresh ground pepper, to taste
- 1 pack Violife Mediterranean Style
FOR THE LEMON PESTO:
- 2 tbsp Violife Prosociano, grated
- 1 cup fresh basil leaves
- 1 clove garlic, roughly chopped
- ½ cup olive oil
- Juice of 1 lemon
- Cook the noodles according to the packet instructions.
- In a medium frying pan over medium heat, melt the Plant Butter, pour oat milk and whisk until bubbly. Add the Violife Epic Cheddar flavour Grated and whisk until a creamy sauce forms. For some extra spiciness you can add sriracha sauce.
- Remove from heat and add the noodles to the pan, mixing to coat evenly.
- Sprinkle with chilli flakes or scallions and enjoy!
