Mediterranean Grill Me Skillet with tomatoes, red pepper and Violife. It's the perfect summer lunch idea, light, colorful and full of flavour!

  • 200 g Violife grill me!, in triangles
  • 800 g tin chopped tomatoes
  • 1 large red pepper diced
  • 2 cloves garlic sliced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp dried chilli flakes
  • 1 tsp paprika
  • sea salt and freshly ground pepper to taste
  • 15 green olives
  • 1 tbsp capers
  • 1 lemon zesto
  • a handful flat-leaf parsley finely chopped
  • toasted pita breads to serve
  1. In a skillet place the tomatoes, red pepper, garlic, olive oil, oregano, chili flakes and paprika and mix well to combine. Season with fresh pepper and sea salt.
  2. Place in a preheated oven at 200°C for 15 minutes.
  3. Remove from the oven and top with the Violife Grill Me! triangles, olives and capers
  4. Place back in the oven for another 25 minutes.
  5. Grate some lemon zest and sprinkle with parsley.
  6. Serve with toasted pita breads on the side.
