Mango Avocado Quinoa Salad

- 1 pack Violife Original Flavour Block, cut in cubes
- 3 cup quinoa cooked
- 1 cup mango diced
- 1 cup avocado diced
- 1 cup cucumber diced
- 1 cup pomegranate
- ¼ cup coriander
FOR THE DRESSING:
- Zest and juice of 1 lime
- 2 tbsp olive oil
- 1 tbsp Thai sweet chili sauce
- salt & Pepper, to taste
- In a small bowl, whisk together dressing ingredients until combined.
- In a large bowl, stir dressing into the cooked quinoa.
- Add mango, avocado, cucumber, pomegranate, coriander and Violife Original Flavour cubes.
