FOR THE COOKIES :
  • 1/4 cup coconut oil, melted
  • 1/3 cup maple syrup
  • 1 tbsp lemon zest
  • 1 ½ tsp lemon extract
  • 1 1/3 cups almond flour
  • 2 tbsp coconut flour
  • ½ tsp baking soda
  • 1/8 tsp salt

FOR THE FROSTING:
  • 1 pack Violife Creamy Original
  • 1 ½ tbsp maple syrup
  • 1 tbsp vanilla essence
  • Food coloring
  • sprinkles
  1. In a large bowl, mix all the cookie ingredients. Let the dough sit for 5 minutes and then place in the refrigerator for 30 minutes covered with cling film.
  2. Preheat the oven to 180°C and line a baking tray with baking paper. Use a rolling pin to open the ball of dough. Use a cookie cutter to cut circles and transfer to the lined baking tray. Bake cookies for 10 minutes and let cool on a baking rack.
  3. To prepare the frosting beat the Violife Creamy Original with the maple syrup and vanilla in a mixer until smooth. Add two drops of food coloring of your choice to give a nice pastel color. Place in a piping bag and use to decorate the cookies when cool. Use sprinkles for more decoration.
