Colourful Vegan Cookies

FOR THE COOKIES :
- 1/4 cup coconut oil, melted
- 1/3 cup maple syrup
- 1 tbsp lemon zest
- 1 ½ tsp lemon extract
- 1 1/3 cups almond flour
- 2 tbsp coconut flour
- ½ tsp baking soda
- 1/8 tsp salt
- Cookie cutters
FOR THE FROSTING:
- 1 pack Violife Creamy Original
- 1 ½ tbsp maple syrup
- 1 tbsp vanilla essence
- Food coloring
- sprinkles
- In a large bowl, mix all the cookie ingredients. Let the dough sit for 5 minutes and then place in the refrigerator for 30 minutes covered with cling film.
- Preheat the oven to 180°C and line a baking tray with baking paper. Use a rolling pin to open the ball of dough. Use a cookie cutter to cut circles and transfer to the lined baking tray. Bake cookies for 10 minutes and let cool on a baking rack.
- To prepare the frosting beat the Violife Creamy Original with the maple syrup and vanilla in a mixer until smooth. Add two drops of food coloring of your choice to give a nice pastel color. Place in a piping bag and use to decorate the cookies when cool. Use sprinkles for more decoration.
