Vegan Pad Thai

- 1 pack Violife Original Flavour Block, cut in cubes
- 200 g wide rice noodles
- 2 tbsp peanut oil
- 2 spring onions sliced
- 2 garlic cloves, finely sliced
- 1 hot red chili, finely sliced
- 2 carrots shaved into ribbons with a speed peeler
- a large handful of green beans cut diagonally
- 1 red pepper finely sliced
- ½ cup mung bean sprouts
- olive oil
FOR THE SAUCE:
- 5 tbsp tamarind sauce
- 5 tbsp curry paste
- Prepare rice noodles according to the instructions on pack.
- Mix the sauce ingredients together in a small bowl.
- Heat up a wok or a large frying pan.
- Pour 1 tbsp olive oil and add garlic, spring onions, and chili.
- Add the peas, red pepper and carrot ribbons.
- Add the sauce and the noodles and stir to combine.
- Add the Violife Original Flavour cubes and stir.
- Serve with lime wedges on the side.
