Green Summer Salad

- 200 g Violife Mediterranean Style Grill Me! block
- 1 cucumber, cut in ribbons
- 1 orange, sliced
- 100 g mixed salad leaves
- 100 g rocket leaves
- 10 radishes, sliced
- 1 tbsp olive oil
- Zest of one lemon or orange
- salt and fresh ground pepper, to taste
FOR THE LEMON PESTO:
- 2 tbsp Violife Prosociano, grated
- 1 cup fresh basil leaves
- 1 clove garlic, roughly chopped
- ½ cup olive oil
- Juice of 1 lemon
For the Lemon Pesto:
- Place the basil and garlic in a food processor and pulse until coarsely chopped.
- Add olive oil, grated Violife Prosociano and lemon juice and blend until finely chopped. Season to taste.
For the Salad:
- Fire up the BBQ and grill both Violife Mediterranean Style blocks for 2-3 minutes each side, until griddle lines appear.
- Remove from the barbecue, let them rest for 2-3 minutes and cut in half.
- Use a vegetable peeler to peel the cucumber into long strips. Place the strips in the bowl with the seasoned oil and gently stir to coat. Toss in a large bowl with the salad leaves.
- Top the salad with the grilled Violife Mediterranean Style, radishes, orange slices, and lemon or orange zest.
- Serve with the lemon pesto and enjoy!
