FOR THE PUDDING:
- 1 pack Violife Just Like Cream Cheese Original
- 16 oz chopped pitted dates
- 4 tbsp ground flax seeds
- 15.5 oz whole wheat pastry flour
- 2 tsp baking soda
- 2 tsp baking powder
- 1 tsp salt
- 3.5 oz coconut oil at room temperature
- 2 tsp natural vanilla extract
- 7 oz cup sugar
FOR THE CARAMEL SAUCE:
- 1/2 pack Violife Just Like Cream Cheese Original
- 14 oz brown sugar
- 3.5 oz coconut oil
- 1 tsp natural vanilla extract
- 1 tsp cinnamon
- 1 tsp nutmeg
- 4 tsp Bourbon
FOR THE COCONUT CREAM:
- 12 fl oz coconut milk [The Hard Part]
- Preheat oven to 356°F.
- To make the red velvet cupcakes, whisk together almond milk and apple cider vinegar and set aside to curdle, for about 5-10 minutes.
- In a large bowl sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt, mixing to combine. Add oil, food coloring, vanilla extract, and almond extract to the curdled mixture and whisk well to combine.
- To make the vanilla cupcakes, follow the exact same steps but don’t add food coloring and substitute cocoa powder with the same amount of flour.
- Place muffin cases in a muffin tin and pour batter into them.
- Place in the oven and bake for 18-20 minutes. Transfer on a cooling rack.
- To make the frostings, whisk all ingredients in bowls. Place in piping bags and decorate your cupcakes.
- You can use Violife Just Like Cream Cheese Strawberry flavour for the red velvet cupcakes frosting and Violife Just Like Cream Cheese Original for the vanilla one.
