  • 8 oz Violife Just Like Mozzarella shreds
  • 4 Bolillo (Mexican Rolls)
  • 7 oz refried black beans
FOR THE PICO DE GALLO SALSA:
  • 3 tomatoes (diced)
  • 1 onion (chopped)
  • 1 Serrano pepper (minced)
  • 1 tsp Cilantro (chopped)
  • salt to taste
  1. Preheat oven to 356°F.
  2. To make the molletes, slice the bolillo rolls horizontally in half, spread each half with refried beans and sprinkle with Violife Just Like Mozzarella shreds.
  3. Place in the oven for 8 minutes or until completely melted.
  4. For the Pico de Gallo salsa, mix the tomatoes with the onion, Serrano pepper, cilantro, and season with salt to taste.
  5. Serve 2 molletes per person and top with Pico de Gallo salsa.
