Strawberry Watermelon Salad

FOR THE SALAD:
- 1 pack Violife Greek White Block, in cubes
- 200 g kale, chopped
- 2 cucumbers, ribonned
- 150 g strawberries, quartered
- 1 watermelon, Parisienne
- Mint leaves, to serve
FOR THE DRESSING:
- thyme sprigs
- 2 tbsp agave syrup
- Juice of 2 limes
- lime zest
- 3 tbsp olive oil
- Salt and pepper, to taste
- Toss all salad ingredients together in a large bowl and mix thoroughly.
- Whisk the dressing ingredients together in a small bowl.
- Drizzle dressing over the salad and garnish with mint leaves.
