FOR THE SALAD:
  • 1 pack Violife Greek White Block, in cubes
  • 200 g kale, chopped
  • 2 cucumbers, ribonned
  • 150 g strawberries, quartered
  • 1 watermelon, Parisienne
  • Mint leaves, to serve
FOR THE DRESSING:
  • thyme sprigs
  • 2 tbsp agave syrup
  • Juice of 2 limes
  • lime zest
  • 3 tbsp olive oil
  • Salt and pepper, to taste
  1. Toss all salad ingredients together in a large bowl and mix thoroughly.
  2. Whisk the dressing ingredients together in a small bowl.
  3. Drizzle dressing over the salad and garnish with mint leaves.
