Vegan Waffles
These vegan waffles taste completely over-the-top! Perfectly made and topped with a delicious lemon cream featuring Violife Creamy Original.

- ½ pack Violife Creamy Original
- 250 g plain flour
- ¾ cups coconut milk
- 2 tsp baking powder
- 2 tsp cider or white wine vinegar
- 1/4 cup sunflower oil
- 2 tsp vanilla extract
- 2-4 Tbsp sugar
- ½ tsp salt
FOR THE LEMON CREAM:
- ½ pack Violife Creamy Original
- Juice of 1 Lemon
- Zest of 1 lemon
- 1 tbsp maple syrup
- 1 tsp vanilla
- Strawberries, to serve
- In a large bowl whisk the flour, sugar, baking powder and salt.
- In another bowl whisk the coconut milk, vinegar, Violife Creamy, sunflower oil and vanilla extract. Add the wet ingredients to the dry ingredients and combine to make a batter. Place in the fridge for one hour.
- Heat your waffle iron and grease with coconut oil. Place 1 Tbsp of batter into the iron and cook until golden brown.
- To make the lemon cream, whisk all ingredients together until smooth. Serve waffles with lemon cream and strawberries or fruits of your liking.
