Tortilla de Patatas

  • 200 g Violife Grated Mozzarella flavour
  • 6 tbsp olive oil
  • 800 grams potatoes cut into ½ cm slices
  • 1 red onion, sliced
  • 140 g chickpea flour
  • 250 g water
  • 1 cup oat milk
  • salt to taste
  • black pepper to taste
  • basil leaves to garnish
  1. Peel the potatoes and cut them in half lengthwise. Slice into ½ cm slices.
  2. In a skillet, heat the olive oil on high heat, add potatoes, onion and salt and fry for 10-15 minutes, until potatoes are soft and golden. Set aside to cool.
  3. In a large bowl add the flour, water, milk, salt and pepper and whisk until combined. Add in the grated Violife and stir.
  4. Place the skillet back on medium heat with a dash of olive oil and pour over the chickpea mixture. Cook for about five minutes, until the mixture is no longer runny.
  5. Place a plate over the tortilla and turn it over, cooking for a further 3 minutes.
  6. Garnish with basil leaves and serve. You might want to add some freshly ground pepper to taste.
